 Ingredients:

  • 1 cup cucumber, diced

  • 1 cup tomatoes, halved

  • 1/2 cup avocado, diced

  • 1/4 cup red onion, finely chopped

  • 1/4 cup spring onions, finely sliced

  • 2 tablespoons extra virgin olive oil

  • 1 tsp cumin seeds

  • 2 tablespoons fresh lemon juice

  • 1 tablespoon fresh coriander, chopped

  • Salt and pepper to taste 


Method:

  1. In a large bowl, combine the cucumber, tomatoes, avocado, red onion and spring onion.

  • 1 teaspoon fresh ginger, grated

Method:
